You will most certainly have a good time in P-Town!! My family and I visit often. The beach at Race Point, which is part of the National Park, is a great!!! place for seeing whales from the beach. The whale watch boats leave the dock and about 10 minutes later your with the whales, basking sharks, dolphins etc. Great birding areas also...

I live on the boarder, we cross A LOT, like once a week. Going into the US, you must have proof of rabies for each animal. I haven't been asked for ages (we could almost be on a first name basis, and some are with the dog), but every once in a while you get a piss pot that demands to see it as though you couldn't possibly have it and they shut up when shove a fist full of papers into their hand. I've never been asked for anything more, even from the piss pots. the last time i crossed for the Flooger Fest GTG (about 3 weeks ago), they asked if I had any lamb based dog food with me. My guy is on fish based, so I said no, she smelled the baggies I had with me and agreed they were fish. I would recommend calling them before you leave and see what they say about dog food that week...it changes. If you can ship a larger bag to your destination, awesome. Travel with a smaller sealed bag and if they take it, they take it. I've never, EVER been asked for anything coming back into Canada, but I would suspect that as long as you can prove vaccinations they wouldn't likely hold you up unless the dog looked really ill. You are Canadian and likely have a Canadian vet, so it isn't like you are importing a foreign animal, they were just on vacation with you. I've only ever had a health certificate done when I first imported my guy from the states, and Canadian customs was like 'what? what the hell is that?'. They really didn't care that I was trying to declare my dog.
